You are correct authentication is a RIPv2 feature

This tells RIP which key chain to use.

a key chain is define outside of the inter face definitions something
like this
key chain keychainname
    key 1
    key-string keyname1
    accept-lifetime 00:00:00 Jan 01 2012 23:59:59 Dec 31 2012
    send-lifetime 00:00:00 Jan 01 2012 23:59:59 Dec 31 2012
    key 2
    key-string keyname2
    accept-lifetime 00:00:00 Jan 01 2011 23:59:59 Dec 31 2011
    send-lifetime 00:00:00 Jan 01 2011 23:59:59 Dec 31 2011

Each key has a name, and send/receive lifetime which makes it possible
to set up a key switching system

This tells RIP to pass the key in plain text or md5?

A setting for key encoding, don't know how it works, but it has to match
across your routers for RIP to work.

Don't know about that either.
My guess, just a plain text string to do auth.

There are plenty of resources online that explain routing protocols and
how to configure a router better than me. Search engine are your friend.
